Harvest rituals: Olives

Balancing on sturdy wooden ladders, the harvesters banter from among the silvery leaves. Some use their fingers to pull the purple fruit off the delicate shoots while others use bright plastic combs. The olives are pressed the very same day, stone on fruit, nothing added. On the steep Umbrian hillsides, everything speaks of an ancient balance.
